Amaranth Cultivation

Amaranth seeds provide complete protein. Their cultivation was nearly abandoned after the Spanish conquest of the Americas. A rare and valuable variety of amaranth was saved from probable extinction by highland farmer Claro and Plenty agronomist Alan Praskin.
